Coconut & Lime Ice Cream

FINALLY!

It's hot and sunny! so what did i do? I went out and bought an ice cream maker!


So this was the first one I tried out, and I'm sure there will be many many variations to come! Coconut ice cream is one of my favourites, and suprisingly hard to find in the shops. Here goes...

You will need:
2 cartons of these


142ml double cream
40g dessicated coconut
85g caster sugar
1 lime

First of all, I'm afraid you do need to plan ahead a bit. The ice cream bowl needs to chill in the freezer for a good few hours to turn the lovely coconutty mixture into actual ice cream. Best to do it the night before I think, but if you really can't wait it should be okay after a few hours.

Now, read this carefully because it gets a bit tricky now. PAY ATTENTION!!


Put all your ingredients (Except the lime) into a bowl.


WHISK


grate in your lime zest and squeeze in the juice (I'll leave this up to you depending on how
lime-y you want it)


Pour into the ice cream maker


Are you still with me? I know it's tough, but just bear with me.

TURN ON your ice cream maker and let it churn, baby churn. Give it about 15-20 minutes

SERVE


*Rum Optional.

As you can see, I got really excited and served it in a coconut shell for extra authenticity. They were a bit of a nightmare opening though, after ages of hacking away at it with a bread knife (which in hindsight was a very stupid idea) I just whacked it with a hammer. Best to put the coconut in a bag and do it outside if I were you though!
